Ingredients

  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 tbsp granulated sugar
  • 1 cup milk (or plant-based alternative)
  • 2 large eggs
  • 3 tbsp melted butter
  • ¼ cup brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp milk (or plant-based alternative)

Instructions

  1. In a large bowl, whisk together flour, baking powder, cinnamon, and granulated sugar until well combined.
  2. In another bowl, mix milk, eggs, and melted butter until frothy. Combine both mixtures gently; lumps are okay.
  3. Heat a non-stick skillet over medium heat and grease lightly with butter or oil.
  4. Pour about half a cup of batter onto the skillet. Immediately sprinkle some of the cinnamon swirl mixture on top before flipping.
  5. Cook until bubbles appear on top; then flip and cook until golden brown on both sides.
  6. In a medium bowl, whisk together softened cream cheese and powdered sugar until smooth.
  7. Gradually add milk until reaching desired drizzling consistency.
