- 2 large eggs
- 3 tbsp melted butter
- ¼ cup brown sugar
- 1 tbsp ground cinnamon
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tbsp milk (or plant-based alternative)
Instructions
- In a large bowl, whisk together flour, baking powder, cinnamon, and granulated sugar until well combined.
- In another bowl, mix milk, eggs, and melted butter until frothy. Combine both mixtures gently; lumps are okay.
- Heat a non-stick skillet over medium heat and grease lightly with butter or oil.
- Pour about half a cup of batter onto the skillet. Immediately sprinkle some of the cinnamon swirl mixture on top before flipping.
- Cook until bubbles appear on top; then flip and cook until golden brown on both sides.
- In a medium bowl, whisk together softened cream cheese and powdered sugar until smooth.
- Gradually add milk until reaching desired drizzling consistency.
