- 4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- 1/2 cup balsamic vinegar
- 1 cup low-sodium chicken broth
- 1/2 cup sweetened dried cranberries
- 2 tbsp honey
Instructions
- Pat chicken breasts dry with paper towels. Season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in balsamic vinegar, chicken broth, honey, and add dried cranberries.
- Return chicken to the skillet, spoon sauce over it. Cover with a lid and let simmer on low heat for about 5 minutes.
- Transfer the chicken to plates and drizzle extra sauce on top before serving.
