  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Add eggs and beat until well combined.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients into the wet mixture while stirring gently to avoid over-mixing.
  5. Pour half of the batter into the prepared baking dish. Sprinkle some cinnamon-sugar mixture on top if desired. Pour the remaining batter over it and bake for about 30 minutes or until a toothpick comes out clean.
  6. While the cake bakes, mix powdered sugar with milk until smooth.
  7. Once cooled slightly but still warm, drizzle frosting over the cake.
  8. Slice and serve warm or at room temperature, optionally topped with whipped cream or ice cream.
