- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs (room temperature)
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup powdered sugar
- 2 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
- In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Add eggs and beat until well combined.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients into the wet mixture while stirring gently to avoid over-mixing.
- Pour half of the batter into the prepared baking dish. Sprinkle some cinnamon-sugar mixture on top if desired. Pour the remaining batter over it and bake for about 30 minutes or until a toothpick comes out clean.
- While the cake bakes, mix powdered sugar with milk until smooth.
- Once cooled slightly but still warm, drizzle frosting over the cake.
- Slice and serve warm or at room temperature, optionally topped with whipped cream or ice cream.
