  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup packed brown sugar
  • 1/4 cup balsamic vinegar
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup water

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Gather all ingredients on the counter.
  3. Heat oil in a large oven-safe pot over medium-high heat. Season the beef with salt and pepper. Sear until browned on all sides, about four minutes per side. Remove and set aside.
  4. In the same pot, add chopped onions and sauté until translucent, about five minutes. Add minced garlic and cook until fragrant.
  5. In a bowl, mix together brown sugar, balsamic vinegar, smoked paprika, cumin, salt, pepper, and water. Pour this mixture into the pot with onions and garlic.
  6. Return the beef to the pot, cover tightly with a lid or foil, and transfer to preheated oven. Cook for about three hours until tender.
  7. Remove from oven and let rest briefly before shredding with two forks. Serve over rice or on toasted buns.
