- 3 lbs beef chuck roast
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 1/2 cup packed brown sugar
- 1/4 cup balsamic vinegar
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup water
Instructions
- Preheat your oven to 300°F (150°C).
- Gather all ingredients on the counter.
- Heat oil in a large oven-safe pot over medium-high heat. Season the beef with salt and pepper. Sear until browned on all sides, about four minutes per side. Remove and set aside.
- In the same pot, add chopped onions and sauté until translucent, about five minutes. Add minced garlic and cook until fragrant.
- In a bowl, mix together brown sugar, balsamic vinegar, smoked paprika, cumin, salt, pepper, and water. Pour this mixture into the pot with onions and garlic.
- Return the beef to the pot, cover tightly with a lid or foil, and transfer to preheated oven. Cook for about three hours until tender.
- Remove from oven and let rest briefly before shredding with two forks. Serve over rice or on toasted buns.
