  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp freshly ground black pepper
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 1 lemon, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels. Rub olive oil generously over the chicken, both inside and out.
  3. Sprinkle kosher salt and black pepper over the entire chicken. Place thyme and rosemary along with half of the lemon in the cavity.
  4. Place the seasoned chicken in a roasting pan or oven-safe skillet, breast-side up. Roast for about 1 hour and 15 minutes, until the internal temperature reaches at least 165°F (75°C).
  5. Remove from oven and let it rest for at least 15 minutes before carving to allow juices to redistribute.
  6. Carve the chicken and drizzle with any pan juices. Serve with your favorite sides.
