- 1 whole chicken (4–5 pounds)
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp freshly ground black pepper
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 1 lemon, halved
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels. Rub olive oil generously over the chicken, both inside and out.
- Sprinkle kosher salt and black pepper over the entire chicken. Place thyme and rosemary along with half of the lemon in the cavity.
- Place the seasoned chicken in a roasting pan or oven-safe skillet, breast-side up. Roast for about 1 hour and 15 minutes, until the internal temperature reaches at least 165°F (75°C).
- Remove from oven and let it rest for at least 15 minutes before carving to allow juices to redistribute.
- Carve the chicken and drizzle with any pan juices. Serve with your favorite sides.
