Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add chopped onion and celery. Sauté until softened, about 5 minutes.
- In a large bowl, crumble the day-old cornbread into bite-sized pieces.
- Combine sautéed veggies with crumbled cornbread in the bowl. Add vegetable broth, fresh herbs, and beaten eggs. Stir gently until well combined but fluffy.
