- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 2 cups fresh spinach or kale
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it into small pieces (about 5-7 minutes).
- Add chopped onions, garlic, carrots, and celery to the pot. Stir occasionally until softened (about another 5 minutes).
- Pour in the diced tomatoes with their juices and vegetable broth. Stir to combine.
- Sprinkle in oregano, basil, salt, and pepper. Allow soup to come to a gentle simmer for about 15 minutes.
- Add spinach or kale and stir until wilted (just a couple of minutes).
