- 2 celery stalks, chopped

- 6 cups low-sodium chicken broth
- 8 oz no-boil egg noodles
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Ingredients: Chop the onions, carrots, and celery into bite-sized pieces to form the mirepoix.
- Sauté Your Aromatics: In a large pot over medium heat, add a splash of olive oil. Sauté the onions, carrots, and celery until softened (about 5 minutes).
- Add Garlic & Chicken: Stir in minced garlic and then add the boneless chicken breasts. Mix well while cooking for additional flavor.
