  • 4 Italian sausages
  • 2 medium bell peppers (any color)
  • 1 medium yellow onion
  • 1 cup shredded mozzarella or provolone cheese
  • 2 tbsp fresh parsley (for garnish)
  • 2 tsp olive oil
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Slice the bell peppers in half lengthwise and remove seeds.
  3. In a skillet over medium heat, cook the Italian sausages for about 5-7 minutes until browned. Slice into bite-sized pieces.
  4. In the same skillet, add olive oil if needed, then sauté chopped onions and bell peppers until softened (about 5 minutes). Add garlic powder toward the end.
  5. Fill each pepper half with sausage pieces and top with sautéed vegetables, then sprinkle shredded cheese generously on top.
  6. Place stuffed peppers in the preheated oven for about 15-20 minutes until tender and cheese is bubbly and golden brown.
  7. Garnish with fresh parsley before serving.
