- 4 Italian sausages
- 2 medium bell peppers (any color)
- 1 medium yellow onion
- 1 cup shredded mozzarella or provolone cheese
- 2 tbsp fresh parsley (for garnish)
- 2 tsp olive oil
- 1 tsp garlic powder
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Slice the bell peppers in half lengthwise and remove seeds.
- In a skillet over medium heat, cook the Italian sausages for about 5-7 minutes until browned. Slice into bite-sized pieces.
- In the same skillet, add olive oil if needed, then sauté chopped onions and bell peppers until softened (about 5 minutes). Add garlic powder toward the end.
- Fill each pepper half with sausage pieces and top with sautéed vegetables, then sprinkle shredded cheese generously on top.
- Place stuffed peppers in the preheated oven for about 15-20 minutes until tender and cheese is bubbly and golden brown.
- Garnish with fresh parsley before serving.
