- 1 lb lean ground beef
- 3 bell peppers (red, yellow, or green), chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups cooked rice (white or brown)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a large baking dish with nonstick cooking spray.
- In a skillet over medium heat, sauté the diced onion and minced garlic until fragrant and translucent, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.
- Once browned, stir in cooked rice, diced tomatoes (with juice), chopped bell peppers, cumin, paprika, salt, and pepper until well combined.
- Transfer the mixture into the prepared baking dish and spread evenly. Cover with aluminum foil and bake for about 30 minutes.
- Remove from oven and let cool slightly before serving.
