  • 3 bell peppers (red, yellow, or green), chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the diced onion and minced garlic until fragrant and translucent, about 5 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.
  4. Once browned, stir in cooked rice, diced tomatoes (with juice), chopped bell peppers, cumin, paprika, salt, and pepper until well combined.
  5. Transfer the mixture into the prepared baking dish and spread evenly. Cover with aluminum foil and bake for about 30 minutes.
  6. Remove from oven and let cool slightly before serving.
