Ingredients

  • 1 lb flank steak
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced
  • 1 ripe avocado
  • ½ cup plain Greek yogurt
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, lime juice, cumin powder, salt, and pepper.
  2. Add flank steak and coat well. Cover and marinate in the refrigerator for at least one hour (overnight is best).
  3. While the steak marinates, slice bell peppers and red onion into thin strips.
  4. Toss them with olive oil, salt, and pepper.
  5. Preheat your grill to medium-high heat (about 400°F or 200°C).
  6. Remove the steak from marinade (discard marinade) and grill for about 5-7 minutes per side for medium-rare doneness. Grill vegetables until tender and lightly charred, about 5 minutes.
  7. Blend ripe avocado with Greek yogurt until smooth.
  8. Add lime juice, salt, pepper, and a splash of water if needed for desired consistency.
  9. Slice grilled steak against the grain.
  10. Layer cooked rice or quinoa in each bowl followed by grilled veggies and sliced steak on top.
  11. Drizzle generously with avocado dressing.
