- 1 lb flank steak
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp cumin powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium red onion, sliced
- 1 ripe avocado
- ½ cup plain Greek yogurt
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a bowl, combine olive oil, lime juice, cumin powder, salt, and pepper.
- Add flank steak and coat well. Cover and marinate in the refrigerator for at least one hour (overnight is best).
- While the steak marinates, slice bell peppers and red onion into thin strips.
- Toss them with olive oil, salt, and pepper.
- Preheat your grill to medium-high heat (about 400°F or 200°C).
- Remove the steak from marinade (discard marinade) and grill for about 5-7 minutes per side for medium-rare doneness. Grill vegetables until tender and lightly charred, about 5 minutes.
- Blend ripe avocado with Greek yogurt until smooth.
- Add lime juice, salt, pepper, and a splash of water if needed for desired consistency.
- Slice grilled steak against the grain.
- Layer cooked rice or quinoa in each bowl followed by grilled veggies and sliced steak on top.
- Drizzle generously with avocado dressing.
