Description

Turkey and Spinach Stuffed Peppers are a flavorful and nutritious dish featuring tender turkey, fresh spinach, and sweet bell peppers, perfect for a hearty meal any night of the week.


Ingredients

  • 4 bell peppers (red, yellow, or green)
  • 1 pound lean ground turkey
  • 2 cups baby spinach
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup grated sharp cheddar cheese
  • Salt, pepper, and Italian seasoning to taste
  • 1 tablespoon olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  2. In a large skillet over medium heat, add olive oil. Sauté the chopped onion and minced garlic for about 2 minutes until fragrant. Add ground turkey, breaking it up with a spatula as it cooks until browned through.
  3. Stir in the fresh spinach into the turkey mixture once it's cooked through. Cook until just wilted (about 2 minutes). Season with salt, pepper, and Italian seasoning to taste.
  4. Remove from heat and mix half of the grated cheddar cheese into the turkey-spinach mixture.
  5. Generously fill each bell pepper with the turkey-spinach-cheese filling until overflowing.
  6. Cover the baking dish with foil and bake for about 25 minutes. Remove foil for an additional 5 minutes to allow cheese to melt and turn golden brown.
