- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1/2 cup breadcrumbs
- 1 large egg
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium beef broth
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, parsley, salt, and pepper. Mix until just combined.
- Roll the mixture into small balls about one inch in diameter and place them on a baking sheet lined with parchment paper.
- Heat olive oil in a large pot over medium heat. Add the meatballs and brown them on all sides for about 5–7 minutes.
- Remove the browned meatballs from the pot and set aside.
- In the same pot, add diced carrots and celery; sauté until softened (about 5 minutes).
- Stir in canned tomatoes and beef broth; bring to a gentle boil while scraping up any bits stuck to the bottom of the pot.
- Return the meatballs to the pot and let everything simmer together on low heat for about 20–25 minutes.
- Serve hot with crusty bread or over fluffy rice.
