Ingredients

  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, parsley, salt, and pepper. Mix until just combined.
  2. Roll the mixture into small balls about one inch in diameter and place them on a baking sheet lined with parchment paper.
  3. Heat olive oil in a large pot over medium heat. Add the meatballs and brown them on all sides for about 5–7 minutes.
  4. Remove the browned meatballs from the pot and set aside.
  5. In the same pot, add diced carrots and celery; sauté until softened (about 5 minutes).
  6. Stir in canned tomatoes and beef broth; bring to a gentle boil while scraping up any bits stuck to the bottom of the pot.
  7. Return the meatballs to the pot and let everything simmer together on low heat for about 20–25 minutes.
  8. Serve hot with crusty bread or over fluffy rice.
