- 1 lb beef sirloin, thinly sliced
- 1/4 cup low-sodium soy sauce
- 2 tbsp mirin
- 1 tbsp sesame oil
- 2 green onions, chopped
- 4 large eggs
Instructions
- In a bowl, combine the soy sauce, mirin, and sesame oil.
- Add the sliced beef to the marinade and let it sit for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the marinated beef in batches for 2-3 minutes per side until browned. Remove from heat.
- Bring water to a gentle boil in a pot.
- Carefully add the eggs and maintain the temperature at around 170°F (77°C) for 13-15 minutes.
- After cooking, transfer eggs to an ice bath to stop cooking.
- Plate the cooked beef over steamed rice or noodles.
- Crack open an onsen egg on top of the beef and let the yolk flow.
- Garnish with chopped green onions and an extra drizzle of sesame oil if desired.
