- 2 cups water
- 1 lb lean ground turkey
- 2 tbsp teriyaki sauce (low-sodium recommended)

- 3 cloves garlic, minced
- 1 cup bell peppers, chopped (assorted colors)
- 2 green onions, sliced thinly
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce to a simmer for about 15 minutes or until fluffy.
- In a large skillet over medium heat, add a tablespoon of oil. Once hot, add ground turkey and cook for about 5 minutes until browned.
- Stir in minced garlic and grated ginger; cook for an additional minute until fragrant.
- Pour in teriyaki sauce and add chopped bell peppers. Simmer for about 3 minutes, allowing flavors to meld.
- Fluff cooked rice with a fork and divide it among serving bowls.
- Top each bowl with the teriyaki turkey mixture and garnish with sliced green onions.
