Ingredients

  • 1 cup jasmine or basmati rice
  • 2 cups water
  • 1 lb lean ground turkey
  • 2 tbsp teriyaki sauce (low-sodium recommended)
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (assorted colors)
  • 2 green onions, sliced thinly

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce to a simmer for about 15 minutes or until fluffy.
  3. In a large skillet over medium heat, add a tablespoon of oil. Once hot, add ground turkey and cook for about 5 minutes until browned.
  4. Stir in minced garlic and grated ginger; cook for an additional minute until fragrant.
  5. Pour in teriyaki sauce and add chopped bell peppers. Simmer for about 3 minutes, allowing flavors to meld.
  6. Fluff cooked rice with a fork and divide it among serving bowls.
  7. Top each bowl with the teriyaki turkey mixture and garnish with sliced green onions.
