  • 4 cloves fresh garlic, minced
  • 1/2 cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 1/4 cup extra virgin olive oil
  • 2 bell peppers (any color), chopped into bite-sized pieces
  • 1 medium zucchini, sliced
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Cut chicken into bite-sized pieces and add to the marinade. Let marinate for at least 30 minutes for optimal flavor.
