  • 2 tablespoons Jamaican curry powder
  • 4 garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)

  • 1 medium onion (finely chopped)
  • 1 bell pepper (sliced thinly)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup low-sodium chicken broth

Instructions

  1. Cut the boneless chicken thighs into bite-sized pieces.
  2. In a large bowl, mix with Jamaican curry powder, minced garlic, grated ginger, and salt. Allow to marinate while prepping other ingredients.
  3. In a large pot over medium heat, add a splash of oil.
  4. Sauté chopped onions until translucent, then add sliced bell peppers and cook for about five minutes until softened.
  5. Add marinated chicken pieces to the pot and cook until browned on all sides (about eight minutes).
  6. Pour in coconut milk and chicken broth, stirring well to combine.
  7. Bring to a gentle simmer; reduce heat to low and cover the pot.
  8. Let it simmer for about twenty minutes, stirring occasionally until chicken is tender and fully cooked.
