- 1 can (13.5 oz) full-fat coconut milk
- 1 cup low-sodium chicken broth
Instructions
- Cut the boneless chicken thighs into bite-sized pieces.
- In a large bowl, mix with Jamaican curry powder, minced garlic, grated ginger, and salt. Allow to marinate while prepping other ingredients.
- In a large pot over medium heat, add a splash of oil.
