- 1 cup long-grain white rice
- 2 cinnamon sticks
- 1/2 cup granulated sugar (or to taste)
- 1 teaspoon vanilla extract
- 4 cups milk (or dairy-free alternative)
- Water (for soaking and blending)
Instructions
- Soak the Rice: Place rinsed rice in a bowl, cover with water, and soak for at least four hours or overnight.
- Blend It Up: Drain the soaked rice, reserving the soaking water. Combine the rice, cinnamon sticks, and two cups of fresh water in a blender. Blend until smooth.
- Strain the Mixture: Use a fine mesh strainer or cheesecloth to strain the blended mixture into another container. Press down on solids to extract as much liquid as possible.
- Sweeten It: Add sugar and vanilla extract to the strained liquid. Stir until well combined, adjusting sweetness if necessary with more sugar or milk.
- Chill Out: Refrigerate the horchata for at least one hour before serving for optimal flavor.
- Serve & Enjoy: Pour over ice in tall glasses and garnish with additional cinnamon if desired.
