Ingredients

  • 1 cup long-grain white rice
  • 2 cinnamon sticks
  • 1/2 cup granulated sugar (or to taste)
  • 1 teaspoon vanilla extract
  • 4 cups milk (or dairy-free alternative)
  • Water (for soaking and blending)

Instructions

  1. Soak the Rice: Place rinsed rice in a bowl, cover with water, and soak for at least four hours or overnight.
  2. Blend It Up: Drain the soaked rice, reserving the soaking water. Combine the rice, cinnamon sticks, and two cups of fresh water in a blender. Blend until smooth.
  3. Strain the Mixture: Use a fine mesh strainer or cheesecloth to strain the blended mixture into another container. Press down on solids to extract as much liquid as possible.
  4. Sweeten It: Add sugar and vanilla extract to the strained liquid. Stir until well combined, adjusting sweetness if necessary with more sugar or milk.
  5. Chill Out: Refrigerate the horchata for at least one hour before serving for optimal flavor.
  6. Serve & Enjoy: Pour over ice in tall glasses and garnish with additional cinnamon if desired.
