- 1 can (15 oz) canned chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 medium red onion, thinly sliced
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup fresh parsley, chopped
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas in a colander to remove excess sodium.
- Dice the cherry tomatoes into halves and chop the cucumber into bite-sized pieces. Thinly slice the red onion.
- In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley. If using, add crumbled feta cheese.
- In a separate small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
- Drizzle the dressing over the salad mixture and gently toss to combine.
