Ingredients

  • 1 can (15 oz) canned chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas in a colander to remove excess sodium.
  2. Dice the cherry tomatoes into halves and chop the cucumber into bite-sized pieces. Thinly slice the red onion.
  3. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley. If using, add crumbled feta cheese.
  4. In a separate small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
  5. Drizzle the dressing over the salad mixture and gently toss to combine.
  6. Allow the salad to chill in the refrigerator for at least one hour before serving for best flavor.
