  • 1 cup whole milk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. In a large mixing bowl, whisk together flour, baking powder, sugar, cinnamon, and a pinch of salt.
  2. In another bowl, combine milk, eggs, melted butter, and vanilla; beat until creamy.
  3. Pour the wet mixture into the dry ingredients; stir gently until just combined (lumps are okay).
  4. Preheat a non-stick skillet or griddle over medium heat; add a pat of butter or cooking spray.
  5. Scoop about half a cup of batter onto the skillet for each pancake; cook until bubbles form on top, then flip and cook until golden brown.
  6. Whisk powdered sugar with enough milk to achieve a pourable consistency.
  7. Drizzle icing over warm pancakes and serve immediately.
