- 10 egg roll wrappers

- 1/4 cup cinnamon sugar (for sprinkling)
Instructions
- In a mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy.
- Gently fold in finely chopped strawberries until evenly distributed.
- Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about two tablespoons of the strawberry cheesecake mixture into the center.
- Fold up the bottom corner over the filling, then fold in the sides tightly. Roll it up towards the top corner and seal with a bit of water.
- In a deep skillet or fryer, heat about two inches of vegetable oil over medium heat to around 350°F (175°C).
- Carefully add a few stuffed egg rolls into the hot oil, avoiding overcrowding. Fry each side for about three minutes or until golden brown and crispy.
- Transfer fried egg rolls onto paper towels to drain excess oil and sprinkle cinnamon sugar generously over each roll.
