  • 1/2 cup granulated sugar
  • 1 cup fresh strawberries, finely chopped
  • 1 tsp vanilla extract
  • 10 egg roll wrappers
  • Vegetable oil (for frying)
  • 1/4 cup cinnamon sugar (for sprinkling)

Instructions

  1. In a mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy.
  2. Gently fold in finely chopped strawberries until evenly distributed.
  3. Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about two tablespoons of the strawberry cheesecake mixture into the center.
  4. Fold up the bottom corner over the filling, then fold in the sides tightly. Roll it up towards the top corner and seal with a bit of water.
  5. In a deep skillet or fryer, heat about two inches of vegetable oil over medium heat to around 350°F (175°C).
  6. Carefully add a few stuffed egg rolls into the hot oil, avoiding overcrowding. Fry each side for about three minutes or until golden brown and crispy.
  7. Transfer fried egg rolls onto paper towels to drain excess oil and sprinkle cinnamon sugar generously over each roll.
