  • 4 fresh jalapeños, chopped (remove seeds for less heat)
  • 8 oz cream cheese, softened
  • 4 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté diced onions until translucent (about 5 minutes). Add minced garlic and sauté until fragrant (about 1 minute).
  2. Stir in the chopped jalapeños and sauté with the onion-garlic mixture until softened (about 2 minutes).
  3. Add softened cream cheese to the pot, stirring until melted and well-combined.
  4. Pour in chicken broth, stirring well. Bring to a gentle simmer and let it cook for about 10 minutes.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in shredded cheddar cheese until fully melted. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh cilantro.
