- 4 fresh jalapeños, chopped (remove seeds for less heat)
- 8 oz cream cheese, softened
- 4 cups low-sodium chicken broth
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil and sauté diced onions until translucent (about 5 minutes). Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in the chopped jalapeños and sauté with the onion-garlic mixture until softened (about 2 minutes).
- Add softened cream cheese to the pot, stirring until melted and well-combined.
- Pour in chicken broth, stirring well. Bring to a gentle simmer and let it cook for about 10 minutes.
- Using an immersion blender, blend the soup until smooth.
- Stir in shredded cheddar cheese until fully melted. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh cilantro.
