- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup chopped almonds
- 2 cups white chocolate chips
Instructions
- Gather a heavy-bottomed saucepan, a wooden spoon, and a lined baking sheet.
- In the saucepan, combine unsalted butter, granulated sugar, brown sugar, and vanilla extract over medium heat. Stir continuously until melted.
- Continue stirring until the mixture turns golden brown (about 5-7 minutes). Use an instant-read thermometer to check for around 300°F (150°C).
- Remove from heat and stir in half of the chopped almonds. Pour onto your prepared baking sheet and spread evenly.
- While still warm, sprinkle white chocolate chips over the toffee and let them sit for about five minutes to melt. Then spread the melted chocolate smoothly.
- Sprinkle remaining chopped almonds on top while chocolate is soft. Allow to cool completely at room temperature or refrigerate for faster results.
- Once cooled, cut into bite-sized pieces and serve or package as gifts.
