- 3–4 boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks (or canned)
- 1 can (15 oz) canned black beans, rinsed
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped (optional)
- 2 cups low-sodium chicken broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- Juice of 1 lime
Instructions
- Chop the chicken breasts into bite-sized pieces to ensure even cooking.
