- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tbsp sesame oil
- 1 cup bell peppers, chopped
- 1 cup carrots, sliced
- 1 cup broccoli florets
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Chop bell peppers, carrots, and broccoli into bite-sized pieces.
- In a bowl, whisk together honey, soy sauce, minced garlic, and sesame oil until combined.
- Place chicken breasts at the bottom of the slow cooker. Pour half of the sauce over the chicken. Top with chopped vegetables and drizzle remaining sauce over everything.
- Set your slow cooker on low for about six hours or high for three hours.
- About thirty minutes before serving, mix cornstarch with water and stir into the slow cooker to thicken the sauce.
- Once cooked, serve on plates or bowls and garnish with fresh herbs or sesame seeds if desired.
