Instructions
- Prepare the Meat: Trim excess fat from the beef chuck roast and season generously with salt and pepper.
- Sear the Beef: In a hot skillet over medium-high heat, sear the beef until golden brown on all sides (about 3-4 minutes per side).
- Mix Your Sauce: In a bowl, whisk together vegetable broth, Dijon mustard, minced garlic, and fresh thyme until smooth.
- Assemble in Slow Cooker: Place sliced onions at the bottom of your slow cooker. Lay the seared beef on top and pour the mustard mixture over it. Toss everything gently to coat.
- Cook Low and Slow: Cover and cook on low for about 6-8 hours or until the beef is fall-apart tender.
