Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 1/2 cup ranch dressing
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 4 soft pita breads

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking sheet with nonstick spray.
  2. In a bowl, combine chicken breasts with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Arrange the marinated chicken on one side of the baking sheet.
  4. Place sliced bell peppers and red onion on the other side of the baking sheet.
  5. Roast in preheated oven for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  6. Remove from oven and let cool slightly. Slice chicken into strips.
  7. Warm pitas in the oven or microwave. Fill each pita with chicken strips, roasted veggies, and drizzle with herby ranch sauce.
