Indulge in these roasted stuffed dates, featuring a sweet and creamy filling that creates a delightful harmony of flavors in every bite.


Ingredients

  • 12 Medjool dates
  • 4 oz goat cheese (or cream cheese)
  • 1/2 cup pecans or walnuts, chopped
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Carefully slice each Medjool date lengthwise without cutting all the way through. Open them slightly to create space for stuffing.
  3. In a bowl, combine crumbled goat cheese and chopped pecans (or walnuts). Add honey and mix until well combined.
  4. Spoon about one teaspoon of the filling into each date.
  5. Place the stuffed dates on the lined baking sheet and bake for 15-20 minutes or until golden brown and crispy on the outside.
  6. Allow to cool slightly before serving. Drizzle with additional honey if desired.
