- 12 Medjool dates
- 4 oz goat cheese (or cream cheese)
- 1/2 cup pecans or walnuts, chopped
- 2 tbsp honey
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Carefully slice each Medjool date lengthwise without cutting all the way through. Open them slightly to create space for stuffing.
- In a bowl, combine crumbled goat cheese and chopped pecans (or walnuts). Add honey and mix until well combined.
- Spoon about one teaspoon of the filling into each date.
- Place the stuffed dates on the lined baking sheet and bake for 15-20 minutes or until golden brown and crispy on the outside.
- Allow to cool slightly before serving. Drizzle with additional honey if desired.
