Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp red food coloring
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, red food coloring, and vanilla extract.
  4. Gradually add dry ingredients to the wet mixture, stirring gently until combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool cakes in pans for about ten minutes before transferring to wire racks to cool completely.
  7. Beat cream cheese and butter together until fluffy.
  8. Gradually mix in powdered sugar and vanilla extract until smooth.
  9. Place one layer of cooled cake on a serving plate and spread a generous amount of frosting on top.
  10. Place the second layer on top and frost the sides and top of the entire cake.
