Instructions
- 1. Crush chocolate graham crackers into fine crumbs using a food processor or by placing them in a resealable bag and smashing them with a rolling pin.
- 2. Combine crumbs with melted butter until sandy. Press this mixture firmly into the bottom of your baking dish.
- 3. In a large bowl, blend mascarpone cheese and heavy whipping cream until peaks form.
- 4. Add sugar and cocoa powder, mixing until smooth and cohesive.
- 5. Spread half of the creamy filling over the crust evenly.
- 6. Layer half of the fresh raspberries on top.
- 7. Repeat with the remaining filling and raspberries.
- 8. Cover with plastic wrap and refrigerate for at least four hours or overnight to allow flavors to meld.
- 9. Once chilled, sprinkle chocolate shavings on top before cutting into squares or rectangles to serve.
