  • ½ cup vegetable oil

  • ½ cup creamy peanut butter
  • 2 cups powdered sugar
  • ½ cup softened butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, beat together eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined; small lumps are okay.
  5. Spoon the batter into each cupcake liner about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean when inserted into the center.
  6. Once cooled completely, beat together softened butter and peanut butter until creamy.
  7. Gradually add powdered sugar until reaching desired sweetness and consistency.
  8. Spread generously atop each cupcake.
