Ingredients

  • 4 large sweet onions (e.g., Vidalia)
  • 4 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Peel and slice the onions into thin rings, aiming for about a quarter-inch thickness.
  3. In a large skillet over medium heat, melt the butter. Add sliced onions, salt, and pepper. Sauté for about 20-25 minutes until golden brown and caramelized.
  4. Spread half of the caramelized onions evenly in the prepared baking dish.
  5. Sprinkle half of the mozzarella and cheddar cheese over the onions.
  6. Layer on the remaining onions followed by the remaining cheese.
  7. In a small bowl, combine panko breadcrumbs with garlic powder and melted butter. Sprinkle generously over the top layer of cheese.
  8. Bake in preheated oven for 25-30 minutes until bubbly and golden brown.
