- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 2 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken breasts and coat them thoroughly with the marinade. Allow marinating for at least 30 minutes.
- Lightly grease a baking dish with nonstick cooking spray or brush with olive oil.
- Place marinated chicken in a single layer in the baking dish. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from oven and let the chicken rest for about five minutes to retain juices.
- Transfer the chicken to plates and drizzle with any leftover marinade. Garnish with fresh herbs or lemon slices as desired.
