  • 34 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 oz fettuccine or penne pasta
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tsp dried Italian herbs (oregano & basil)
  • Fresh spinach (about 2 cups)

Instructions

  1. Gather all your ingredients for an efficient cooking process.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper. Cook for about six minutes on each side until golden brown. Remove from skillet and set aside.
  3. While the chicken cooks, boil water in a separate pot and cook fettuccine or penne according to package instructions until al dente. Drain and set aside.
  4. In the same skillet used for chicken, sauté minced garlic until fragrant (about one minute). Add chicken broth and bring to a simmer while scraping up brown bits from the pan.
  5. Pour in heavy cream, stirring continuously until thickened (about three minutes). Stir in grated Parmesan cheese and dried Italian herbs.
  6. Return cooked chicken to the skillet along with cooked pasta and fresh spinach. Toss gently until well-combined and heated through.
  7. Transfer to plates and sprinkle with additional Parmesan if desired.
