- 3–4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning
- 1/2 cup freshly grated Parmesan cheese
- 8 oz fettuccine or penne pasta (cooked according to package instructions)
Instructions
- 1. Season chicken breasts with salt and pepper.
- 2. Heat olive oil in a large skillet over medium heat. Sear chicken until golden brown, about 5-7 minutes on each side. Remove from skillet and set aside.
- 3. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- 4. Pour in heavy cream and chicken broth. Stir well, scraping up any bits from the bottom of the skillet.
- 5. Add sun-dried tomatoes and Italian seasoning. Simmer gently until slightly thickened.
- 6. Return the chicken to the skillet along with cooked pasta. Toss well to coat everything in the sauce.
- 7. Stir in freshly grated Parmesan cheese until melted.
