- 1 cup full-fat coconut milk (or light coconut milk)
- 1/4 cup chia seeds
- 1 tsp turmeric powder
- 2 tbsp honey or maple syrup
Instructions
- Blend the Base: In a blender, combine diced mango (reserving some chunks for topping), coconut milk, honey or maple syrup, and turmeric powder. Blend until smooth and creamy.
- Mix in the Chia Seeds: Pour the blended mixture into a bowl. Stir in chia seeds until evenly distributed.
- Chill: Cover the bowl with plastic wrap or transfer to individual jars. Refrigerate for at least four hours, preferably overnight, to allow the chia seeds to swell and thicken.
- Serve: Once set, stir well before serving. Top with reserved mango chunks and shredded coconut if desired.
