- 1 cup mascarpone cheese
- 1 cup heavy cream
- Zest of one lemon
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease two round cake pans with butter or nonstick spray.
- In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- Using an electric mixer, cream the softened butter until light and fluffy. Gradually add the dry mixture while mixing on medium speed.
- Add eggs one at a time, mixing well after each addition. Pour in the limoncello and mix until fully incorporated.
- Pour the batter evenly into prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- In another bowl, whip together mascarpone cheese, heavy cream, lemon zest, and powdered sugar until smooth and fluffy.
- Once cakes are cooled, layer them with mascarpone frosting between them and cover the top and sides with more frosting.
