Ingredients

  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 1/2 cup limoncello liqueur (or lemon juice for non-alcoholic)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • Zest of one lemon
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans with butter or nonstick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  3. Using an electric mixer, cream the softened butter until light and fluffy. Gradually add the dry mixture while mixing on medium speed.
  4. Add eggs one at a time, mixing well after each addition. Pour in the limoncello and mix until fully incorporated.
  5. Pour the batter evenly into prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. In another bowl, whip together mascarpone cheese, heavy cream, lemon zest, and powdered sugar until smooth and fluffy.
  7. Once cakes are cooled, layer them with mascarpone frosting between them and cover the top and sides with more frosting.
