Description

Ingredients

  • 1 cup dried black-eyed peas (or 2 cans, drained)
  • 12 oz smoked sausage, sliced
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • Cayenne pepper, to taste
  • 2 tsp olive oil

Instructions

  1. Rinse and soak the black-eyed peas overnight if using dried. Chop the onion and green bell pepper, then mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the chopped onion and green bell pepper until softened (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Add sliced smoked sausage to the pot. Cook until browned on all sides to enhance flavor.
  4. Pour in chicken broth and add soaked or canned black-eyed peas. Bring to a boil, then reduce heat to simmer for about 30 minutes.
  5. Stir in cayenne pepper along with salt and pepper to taste during the last few minutes of cooking.
  6. Ladle soup into bowls, garnishing with parsley or green onions if desired.
