- 1 cup dried black-eyed peas (or 2 cans, drained)
- 12 oz smoked sausage, sliced
- 1 medium onion, finely chopped
- 1 medium green bell pepper, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- Cayenne pepper, to taste
- 2 tsp olive oil
Instructions
- Rinse and soak the black-eyed peas overnight if using dried. Chop the onion and green bell pepper, then mince the garlic.
- In a large pot over medium heat, add olive oil. Sauté the chopped onion and green bell pepper until softened (about 5 minutes). Add minced garlic and cook until fragrant.
- Add sliced smoked sausage to the pot. Cook until browned on all sides to enhance flavor.
- Pour in chicken broth and add soaked or canned black-eyed peas. Bring to a boil, then reduce heat to simmer for about 30 minutes.
- Stir in cayenne pepper along with salt and pepper to taste during the last few minutes of cooking.
- Ladle soup into bowls, garnishing with parsley or green onions if desired.
