  • 1 cup plain yogurt
  • 2 tsp garam masala
  • 1 tbsp fresh ginger, minced
  • Salt and pepper to taste
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup tomato puree
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine yogurt, garam masala, minced ginger, salt, and pepper.
  2. Add diced chicken breasts and coat well. Let marinate for at least 30 minutes.
  3. In a large skillet over medium heat, add oil and sauté chopped onions until golden brown (about 5 minutes).
  4. Add minced garlic and sauté until fragrant.
  5. Add the marinated chicken to the skillet and cook until no longer pink (about 7-10 minutes).
  6. Stir in tomato puree and coconut milk; lower the heat and simmer gently for about 10 minutes.
