  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain yogurt
  • 4 cloves fresh garlic, minced
  • 2 inches fresh ginger, grated
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • Salt to taste
  • 2 tbsp unsalted butter
  • 1 medium onion, chopped
  • 1 can (15 oz) tomato puree
  • 1 cup heavy cream
  • 2 tsp garam masala

Instructions

  1. In a large bowl, mix together yogurt, minced garlic, grated ginger, cumin powder, coriander powder, and salt.
  2. Cut chicken into chunks and coat with marinade. Cover and refrigerate for at least one hour (or overnight for more flavor).
  3. In a large pan over medium heat, melt butter.
  4. Add chopped onion and sauté until translucent (about five minutes).
  5. Stir in garam masala and cook until fragrant (about one minute).
  6. Add marinated chicken pieces to the pan along with any remaining marinade. Cook for about seven minutes until chicken is no longer pink inside.
  7. Pour in tomato puree and bring to a gentle simmer. Cook uncovered for about ten minutes while stirring occasionally.
  8. Reduce heat to low; slowly stir in heavy cream until fully combined. Simmer for another five minutes to meld flavors.
