- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup plain yogurt
- 4 cloves fresh garlic, minced
- 2 inches fresh ginger, grated
- 2 tsp cumin powder
- 2 tsp coriander powder
- Salt to taste
- 2 tbsp unsalted butter
- 1 medium onion, chopped
- 1 can (15 oz) tomato puree
- 1 cup heavy cream
- 2 tsp garam masala
Instructions
- In a large bowl, mix together yogurt, minced garlic, grated ginger, cumin powder, coriander powder, and salt.
- Cut chicken into chunks and coat with marinade. Cover and refrigerate for at least one hour (or overnight for more flavor).
- In a large pan over medium heat, melt butter.
- Add chopped onion and sauté until translucent (about five minutes).
- Stir in garam masala and cook until fragrant (about one minute).
- Add marinated chicken pieces to the pan along with any remaining marinade. Cook for about seven minutes until chicken is no longer pink inside.
- Pour in tomato puree and bring to a gentle simmer. Cook uncovered for about ten minutes while stirring occasionally.
- Reduce heat to low; slowly stir in heavy cream until fully combined. Simmer for another five minutes to meld flavors.
