  • 1/2 tsp baking soda

Instructions

  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together whole wheat flour, cinnamon, nutmeg, baking soda, and salt.
  4. In another bowl, mix grated carrots, honey or maple syrup, and melted coconut oil until well combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Gently fold in the dark chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them about two inches apart.
  8. Bake for 12-15 minutes or until edges are lightly browned. Let cool on wire racks before serving.
