- 1 lb lean ground turkey
- 1 cup bell peppers, diced
- 1 cup broccoli florets
- 2 green onions, chopped
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey or brown sugar
- 2 cloves garlic, minced
Instructions
- Rinse jasmine or brown rice and cook according to package instructions.
- In a large skillet over medium heat, add a splash of oil and sauté bell peppers and broccoli until slightly softened but still crunchy (about 3-4 minutes).
- Add ground turkey to the skillet with veggies. Cook for about 5 minutes, breaking it apart until golden brown and fully cooked.
- Stir in soy sauce, honey (or brown sugar), and minced garlic. Mix until everything is well-coated and heated through.
- Spoon the turkey mixture over cooked rice and garnish with chopped green onions.
- Drizzle any remaining sauce from the pan on top before serving.
