- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated fresh Parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1.5 lbs baby potatoes, halved or quartered
- 2 tbsp extra virgin olive oil

Instructions
- Preheat your oven to 400°F (200°C). Prepare a large baking dish with nonstick spray.
- Season chicken breasts with salt, pepper, oregano, and a drizzle of olive oil. Massage the seasonings into the meat.
- Arrange chicken in the baking dish.
- In a separate bowl, toss halved baby potatoes with olive oil, salt, pepper, and oregano until well coated.
- Place seasoned potatoes around the chicken in the baking dish.
- Sprinkle minced garlic evenly over both chicken and potatoes.
- Generously top with grated Parmesan cheese.
- Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown. Serve hot, drizzling any remaining cheesy garlic sauce from the baking dish over your meal for added flavor!
