Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated fresh Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1.5 lbs baby potatoes, halved or quartered
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a large baking dish with nonstick spray.
  2. Season chicken breasts with salt, pepper, oregano, and a drizzle of olive oil. Massage the seasonings into the meat.
  3. Arrange chicken in the baking dish.
  4. In a separate bowl, toss halved baby potatoes with olive oil, salt, pepper, and oregano until well coated.
  5. Place seasoned potatoes around the chicken in the baking dish.
  6. Sprinkle minced garlic evenly over both chicken and potatoes.
  7. Generously top with grated Parmesan cheese.
  8. Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown. Serve hot, drizzling any remaining cheesy garlic sauce from the baking dish over your meal for added flavor!
