- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 lb baby potatoes, quartered
- 1 cup grated fresh Parmesan cheese
- 2 tbsp olive oil
- 2 tsp dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Spray a large baking dish with nonstick cooking spray.
- In a bowl, mix minced garlic, olive oil, salt, pepper, and dried herbs.
- Coat each chicken breast in the garlic mixture thoroughly.
- Toss quartered baby potatoes in the same bowl until evenly coated.
- Place seasoned chicken in the baking dish and arrange the potatoes around them.
- Sprinkle grated Parmesan cheese generously over both the chicken and potatoes.
- Roast in the preheated oven for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
