  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 lb baby potatoes, quartered
  • 1 cup grated fresh Parmesan cheese
  • 2 tbsp olive oil
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spray a large baking dish with nonstick cooking spray.
  3. In a bowl, mix minced garlic, olive oil, salt, pepper, and dried herbs.
  4. Coat each chicken breast in the garlic mixture thoroughly.
  5. Toss quartered baby potatoes in the same bowl until evenly coated.
  6. Place seasoned chicken in the baking dish and arrange the potatoes around them.
  7. Sprinkle grated Parmesan cheese generously over both the chicken and potatoes.
  8. Roast in the preheated oven for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
