Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1.5 lbs baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a small saucepan, melt butter over low heat. Stir in minced garlic and oregano. Remove from heat and mix in half of the grated Parmesan cheese.
  4. Place seasoned chicken breasts in the baking dish alongside halved baby potatoes. Drizzle olive oil over both and pour the garlic-Parmesan mixture on top. Toss gently until everything is coated evenly.
  5. Roast in the preheated oven for about 30-35 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
  6. In the last few minutes of cooking, sprinkle remaining Parmesan cheese over everything for a cheesy finish. Return to oven until bubbly and golden brown.
  7. Serve warm, drizzled with any remaining sauce.
