- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 1.5 lbs baby potatoes, halved or quartered
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 1 tsp dried oregano
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper on both sides.
- In a small saucepan, melt butter over low heat. Stir in minced garlic and oregano. Remove from heat and mix in half of the grated Parmesan cheese.
- Place seasoned chicken breasts in the baking dish alongside halved baby potatoes. Drizzle olive oil over both and pour the garlic-Parmesan mixture on top. Toss gently until everything is coated evenly.
- Roast in the preheated oven for about 30-35 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
- In the last few minutes of cooking, sprinkle remaining Parmesan cheese over everything for a cheesy finish. Return to oven until bubbly and golden brown.
- Serve warm, drizzled with any remaining sauce.
