- 3 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 1 tbsp curry powder
- 1 cup coconut milk
- 2 sheets puff pastry (thawed if frozen)
- Fresh cilantro (for serving)
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Sauté chopped onion and minced garlic until translucent (about 3-5 minutes).
- Add mixed vegetables; cook for another 5 minutes until slightly softened.
- Stir in curry powder and coconut milk; simmer for 5 minutes until slightly thickened.
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick spray.
- Roll out one sheet of puff pastry into the baking dish as the base layer.
- Pour the curried veggie mixture onto the pastry base.
- Roll out the second sheet of puff pastry, cut slits to create a lattice design, and place it over the filling.
