Ingredients

  • 12 oz penne pasta
  • 34 boneless, skinless chicken breasts
  • 1 cup fresh asparagus, chopped into bite-sized pieces
  • 1 cup button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil

Instructions

  1. Chop asparagus and slice mushrooms. Mince garlic and set everything aside.
  2. In a large pot of salted boiling water, cook penne pasta according to package instructions until al dente. Drain and reserve half a cup of pasta water.
  3. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for about 6 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  4. In the same skillet, add minced garlic, sliced mushrooms, and chopped asparagus (add more olive oil if needed). Sauté for about 5 minutes until tender.
  5. Pour in heavy cream and chicken broth. Stir well, then gradually add grated Parmesan cheese until melted and creamy. If too thick, add reserved pasta water to reach desired consistency.
  6. Slice rested chicken into strips and return it to the skillet along with drained penne pasta. Toss together until well coated in sauce. Serve immediately with an extra sprinkle of Parmesan if desired.
