- 1 lb Italian sausage (spicy or mild)
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 28 oz crushed tomatoes
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions
- In a large pot over medium heat, add the Italian sausage. Cook until browned, about 5 minutes.
- Add chopped onions and minced garlic; sauté until onions are translucent.
- Stir in crushed tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Add heavy cream to the soup mixture and stir well. Let it simmer gently for another 5 minutes.
- Remove from heat and mix in ricotta cheese until smooth.
- Ladle soup into bowls and top each with shredded mozzarella cheese.
- Garnish with fresh basil leaves before serving.
