- 24 ladyfinger cookies

Instructions
- In a mixing bowl, combine mascarpone cheese, sugar, and vanilla extract. Beat until smooth and creamy for about 2-3 minutes.
- Brew one cup of strong espresso or coffee and let it cool slightly.
- Quickly dip each ladyfinger into the cooled coffee—just a second on each side is ideal to ensure they are moist but not soggy.
- Place a layer of dipped ladyfingers in your serving dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
- Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture on top. Smooth out the surface with a spatula.
- Cover with plastic wrap and refrigerate for at least four hours or overnight for optimal flavor melding.
- Before serving, dust cocoa powder generously over the top.
