- 6 large cinnamon rolls, cut into bite-sized pieces
- 4 large eggs
- 2 cups whole milk (or almond/oat milk)
- 1 cup light brown sugar
- 2 tsp vanilla extract
- 1 cup powdered sugar
- 2 tbsp milk (or cream cheese for added richness)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
- Place the cinnamon roll pieces in the greased baking dish.
- In a large bowl, whisk together eggs, milk, brown sugar, and vanilla until smooth.
- Pour the egg mixture over the cinnamon roll pieces and gently toss to coat. Let sit for 10 minutes.
- Bake in the preheated oven for 30-35 minutes until puffed and golden brown.
- While baking, mix powdered sugar with milk or cream cheese until smooth.
- Drizzle over the warm bread pudding after it comes out of the oven.
